12 Aromas of White Wine - A Guided Exploration

1. Lemon

Fresh, direct, unmistakable. Lemon aroma is one of the first we learn to recognize and is very present in young, dry, lively white wines. We find this scent in varietals such as Sauvignon Blanc, Chardonnay (non-barrelled), Soave, Pinot Grigio and Riesling.
It immediately evokes freshness and acidity and prepares the palate for a lean, citrusy wine.

2. Grapefruit

Similar to lemon but more bitter and complex, grapefruit has a citrusy aroma but with green and resinous undertones. It is found in the most aromatic Sauvignon Blancs (such as those from New Zealand), in wines made from Hondarribi Zuri grapes, and in some versions of Verdejo.
Recognizing it helps distinguish more vertical and assertive wines.

3. Pineapple

A tropical touch that enriches the wine with sweetness and roundness. Pineapple is a fruity but ripe aroma typical of warm-climate Chardonnays, Gewürztraminers and Macabeo/Viuras.
It is a clear indicator of a wine with good ripeness or partial malolactic fermentation.

4. Pear

Elegant and soft, pear is a very present aroma in wines from Pinot Blanc, Garganega and Xarel-lo. It can also recall the scent of ripe summer fruit, helping to make the wine's bouquet more velvety.
Perfect for identifying delicate but persistent whites.

5. Green apple

Crisp, tart, refreshing. This aroma is especially common in white wines from cool climates and in youth. It is often encountered in non-wood-aged Chardonnays, Alcañon, Chenin Blanc, and even Prosecco.
It helps to recognize fresh, linear wines with good acidity.

6. Acacia

Floral, and slightly sweet, evokes elegance and refinement. Acacia is found in many aromatic whites such as Muscat, Macabeo/Viura and Malvasia.
Its scent is a key to identifying fragrant wines, often to be drunk young, perfect as an aperitif.

7. Sage

A balsamic, dry, green herbaceousness that adds freshness and complexity. Sage aroma is typical of grape varieties such as Verdejo, Torrontés and Parellada, and is found in white wines with marked varietal expression. It is also present clearly and perceptibly in Muscat wines.
Its presence enriches the nose with vegetables and refreshing nuances.

8. Chalk

Mineral scent par excellence. Chalk tells of terroir, soil composition, and the hand of the producer.It is found in wines such as Palomino (base for Sherry), Muscadet, and in Rieslings from limestone areas.
It is a technical aroma, not always easy to perceive, but extremely fascinating.

9. Honey

Soft, enveloping, with a complex sweetness. Honey is a tertiary aroma that can appear in evolved white or dessert wines, and is also found in grapes such as Petit Courbu, Malvasia and Xarel-lo.
It is an elegant signature for meditation wines or to pair with blue cheeses.

10. Butter

An aroma that reveals aging. Butter is a clear indicator of malolactic fermentation or aging in wood. Present in barrel-aged Chardonnays and structured Garnacha Blanca, it adds richness and creaminess to the wine.
It is not a scent for everyone, but it is critical to understanding certain vinifications.

11. Blackcurrant bud

Green, pungent, at times vegetal. This aroma is characteristic of Sauvignon Blanc and Verdejo. This aroma is due in particular to a molecule of the “thiol” family: 4-methyl-4mercaptopentan-2one. It has a very low threshold of perception for humans and is therefore recognized even when present in very low concentrations. The odor of these molecules is not to be confused with that of the methoxy pyrazine molecules, also present in sauvignon grapes, but perceptible only in the less ripe ones, with hints of green bell pepper and green leaves. A hallmark of intensely varietal wines.

12. Bread crust

A secondary or tertiary aroma typical of bottle-fermented sparkling wines such as Cava or Champagne. It comes from the autolysis of the yeast and tells of the time spent in aging.
Smelling it is like opening a warm baguette: cozy, toasty, deep.
It is a technical aroma, not always easy to perceive, but extremely fascinating.
