The Tomato Leaf has a green scent that recalls aromatic herbs. It is very different from the scent of the tomato fruit that we are used to eating. Tomato leaf is an aroma we don’t usually encounter in our daily life and therefore we aren’t used to identifying.
It is an aroma that is well-appreciated in gourmet cooking and often indicates an Olive Oil of high quality. It can be found most often in oils produced from the cultivars Tonda Iblea, Itrana, Nocellara and Biancolilla.
