The aroma of fresh-cut grass is a scent that is very characteristic of fresh-smelling Olive Oils made with young/ green olives and is often indicative of high quality. It gives a net sensation of smell and taste that is present in the olfactory identity of many EVOOs.
In Chocolate the green grass aroma is less common and renders the South American varieties more aromatically complex. This note, in combination with that of banana, is typical of the highest quality Nacional of Equador.
