Artichoke

 

The aroma of an Artichoke includes the scent of its stem and heart. It is bitter but not aggressive.

It is an unusual aroma that many people have perceived when eating artichokes, but few are able to identify in a blind smell test. 

This aroma is most often detected in Olive Oils produced with green olives. Some cultivars that best present the aroma are Coratina, Frantoio, Cima di Melfi, Rasara, Moraiolo, Bosana and Nostrana di Bisighella.
