Mint

MINT, along with eucalyptus, is the most commonly used aroma to describe the balsamic notes of a wine. Balsamic notes are considered a plus in the bouquet of many structured red wines. In fact, the herbaceous aromas, which are strong in some young red wines (for example, Cabernet Sauvignon has a green pepper aroma), transform into balsamic notes as the same wine ages. This scent is often found in wines made from Cabernet Sauvignon, Aglianico, some Chiantis, Spanish Garnacha, and in the American Merlot from the Columbia Valley.
