Thyme
THYME belongs to the aromatic herb family, along with oregano, rosemary, sage, basil, bay leaves and others. Its strong aroma is given by a phenolic chemical compound called “thymol” also present in oregano. Its scent recalls flowers, herbaceous and balsamic notes.
The aroma of thyme in wine is not very common, but when it is present it adds an interesting complexity to the bouquet. It is found both in red wines such as Sangiovese, Nero D'Avola, Nebbiolo, and in some white wines such as Malvasia, Vermentino, and others.
