Leather

This aroma is given by compounds of phenolic origin that, in Wine, must be very delicate. Like all earthy aromas (mushroom, truffle, undergrowth) and animalic aromas (stable, hair, sweat and fur) it can be very unpleasant if intense. On the contrary, when it is very subtle, it can add complexity to the bouquet of the Wine. It is a tertiary aroma due to oxidation that occurs after many years of aging in the bottle.

It can be found in White Wines, Red Wines and Oxidized Wines (for example, Marsala Wine). Among Red Wines, the leather aroma is often found in Wines from Tempranillo grapes from Spain.
